  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt (plus more for garnish)
  • 6 ounces dark chocolate (60–70% cocoa), finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch tart pan with a removable bottom.
  2. For the crust, whisk together flour, cocoa powder, powdered sugar, and salt. Cut in cold butter until crumbly. Mix in egg yolk and ice water until dough forms. Press into the pan and chill for 15 minutes before baking for 20 minutes.
  3. For the salted caramel filling, heat sugar over medium heat until melted and amber-colored. Stir in butter, then whisk in cream, vanilla extract, and sea salt until smooth. Pour into cooled crust and refrigerate for 30 minutes.
  4. To make ganache, heat cream until simmering, pour over chopped dark chocolate, let sit for 2 minutes, then stir in butter until glossy. Pour over chilled caramel layer.
