  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes.
  3. In another bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, vanilla, and salt; mix gently.
  4. Pour filling over crust and bake for 30–35 minutes until edges set and center jiggles slightly. Cool in the oven for 15 minutes, then chill for at least 4 hours or overnight.
  5. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden.
