  • 1 chicken breast, sliced into strips
  • 1 tbsp olive oil
  • tsp garlic powder
  • tsp oregano
  • Salt & black pepper
  • 1 medium sweet potato, cut into wedges
  • 1 tbsp olive oil
  • tsp paprika
  • Salt to taste
  • Avocado, diced
  • cup cherry tomatoes, halved
  • small red onion, sliced
  • 1 cup mixed greens or chopped romaine
  • 1 tsp olive oil
  • tsp lemon juice
  • Salt & pepper
  • 2 tbsp plain Greek yogurt
  • 1 tsp lemon juice
  • 1 tsp chopped parsley or cilantro
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss sweet potato wedges with olive oil, paprika, and salt. Spread on a baking sheet and bake for 25-30 minutes until golden brown.
  2. Coat chicken strips in olive oil, garlic powder, oregano, salt, and pepper. Grill or pan-sear over medium heat for approximately 4-5 minutes per side until cooked through.
  3. In a bowl, combine mixed greens, diced avocado, halved cherry tomatoes, and sliced red onion. Drizzle with olive oil and lemon juice; season with salt and pepper.
  4. Mix Greek yogurt with lemon juice, chopped herbs, salt, and pepper in another bowl.
  5. Serve grilled chicken alongside roasted sweet potatoes and the avocado salad. Drizzle with herbed yogurt sauce.
