  • 2 links spicy Italian chicken sausage (casings removed)
  • 2 leeks (sliced)
  • 1 fennel bulb (sliced)
  • 1 large parsnip (diced)
  • 1 medium carrot (diced)
  • 1 rib celery (diced)
  • Salt and black pepper
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic (pressed)
  • 1 can whole tomatoes (28 ounces, chopped)
  • 1 can navy beans (15 ounces, drained and rinsed)
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Lemon juice (squeeze from about 1 lemon)
  • Gnocchi (optional)

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. Heat oil in a large soup pot over medium-high heat; add crumbled sausage and brown for a few minutes.
  3. Stir in leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until tender.
  4. Add garlic and stir until fragrant; then mix in tomatoes and navy beans. Pour in chicken stock/broth and combine well.
  5. Cover and simmer for about 20 minutes until all vegetables are tender.
  6. Stir in kale and lemon juice before serving over gnocchi in bowls.
