  • 310 g plain flour
  • 5 g salt
  • 2.5 g ground turmeric
  • 120 g frozen unsalted butter, diced
  • 120 g frozen vegetable shortening
  • 120 ml icy cold water
  • 225 g minced beef
  • 2 garlic cloves, minced
  • 1 small onion, finely diced
  • 50 g breadcrumbs
  • 120 ml beef stock
  • 15 ml soy sauce
  • 1 g ground black pepper
  • 5 g salt
  • 1 g cayenne pepper (optional)
  • 1 g thyme leaves
  • 5 g Jamaican curry powder
  • 1 g ground allspice

Instructions

  1. Toss flour, turmeric, and salt together in a big bowl.
  2. Drop in the cold butter and frozen shortening.
  3. Use your fingertips to work them into the flour until rough clumps form.
  4. Gradually add icy water while gently mixing until it just starts coming together.
  5. Flatten the dough into a disc shape, wrap it snugly, and chill in the fridge for about half an hour.
  6. Heat a pan over medium heat.
  7. Cook the minced beef while breaking it up.
  8. Add onion, garlic, thyme, salt, black pepper, curry powder, allspice, and cayenne if desired.
  9. Pour in beef stock and soy sauce; stir well.
  10. Allow it to bubble for about 10 minutes until thickened.
  11. Stir in breadcrumbs and remove from heat; let cool.
  12. Preheat your oven to 190°C (375°F).
  13. Dust your counter with flour; roll out chilled dough to about 3 mm thick.
  14. Cut out rounds using a cutter or small bowl measuring about 15 cm in diameter.
  15. Spoon approximately 30 ml of filling onto one half of each round.
  16. Fold the dough over and pinch edges closed using a fork.
  17. Brush tops with egg wash for a golden finish.
  18. Line a baking tray with parchment paper; place assembled patties on top.
  19. Bake in preheated oven for about 20–25 minutes or until golden brown and crisp on top.
