  • 1/2 cup raspberry preserves
  • 1 cup unsalted butter, softened (for frosting)
  • 3 1/2 cups powdered sugar
  • 1/4 cup raspberry puree
  • 1 teaspoon vanilla extract (for frosting)
  • A pinch of salt (for frosting)
  • Fresh raspberries for garnish
  • Dark chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. Cream butter and sugar in a large bowl until fluffy; add eggs one at a time and incorporate vanilla.
  4. Alternately mix in the dry ingredients and buttermilk, finishing with dry ingredients. Stir in boiling water until smooth.
  5. Fill cupcake liners halfway with batter, spoon in raspberry preserves, then top with more batter until three-quarters full.
  6. Bake for 18-22 minutes; allow to cool completely before frosting.
  7. For frosting, beat softened butter and gradually mix in powdered sugar, raspberry puree, vanilla, and salt until fluffy.
  8. Frost cupcakes and garnish with fresh raspberries and dark chocolate shavings.
