  • 34 lb lamb shoulder (bone-in)
  • 3 tbsp olive oil
  • 4 garlic cloves (minced)
  • 2 tbsp fresh rosemary (finely chopped)
  • 1 tbsp fresh thyme leaves
  • Salt and black pepper (to taste)
  • 1 cup dry white grape juice or chicken broth
  • Grapes (for caramelizing)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture over the lamb shoulder.
  3. Place the lamb in a roasting pan; pour grape juice or broth around it. Cover with aluminum foil and roast for about 4 hours until tender.
  4. In the last 30 minutes, toss grapes in olive oil and add them to the roasting pan to caramelize.
  5. Once cooked, let the lamb rest for at least 15 minutes before slicing and serve with caramelized grapes.
