  • 2 cans black-eyed beans (with liquid)
  • 1 tbsp oil
  • 1 small onion (finely chopped)
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp chili flakes
  • 2 garlic cloves (minced)
  • 1 tsp minced ginger
  • 1/2 tsp turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 2 tbsp tomato puree
  • 1 tbsp lemon juice
  • Salt & pepper to taste
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Sauté onions with mustard seeds, cumin seeds, and chili flakes until translucent (about 5 minutes).
  2. Add garlic, ginger, black-eyed beans (with liquid), tomato puree, and lemon juice. Stir to combine.
  3. Bring to a boil, then reduce heat and simmer for 10–15 minutes until the sauce thickens. Season to taste with salt and pepper.
  4. Garnish with fresh coriander before serving.
