2 cans black-eyed beans (with liquid)
1 tbsp oil
1 small onion (finely chopped)
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp chili flakes
2 garlic cloves (minced)
1 tsp minced ginger
1/2 tsp turmeric
1 tsp ground coriander
1 tsp ground cumin
2 tbsp tomato puree
1 tbsp lemon juice
Salt & pepper to taste
Fresh coriander for garnish
Instructions
Heat oil in a large pan over medium heat. Sauté onions with mustard seeds, cumin seeds, and chili flakes until translucent (about 5 minutes).
Add garlic, ginger, black-eyed beans (with liquid), tomato puree, and lemon juice. Stir to combine.
