  • ½ cup semisweet chocolate chips
  • ½ cup natural cocoa powder
  • ½ teaspoon instant coffee grounds (optional)
  • 1 cup tightly packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs + 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup + 2 Tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup salted butter, softened
  • 8 oz cream cheese softened (brick-style, not spreadable)
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • Food coloring — I used Americolor gel 'mint green' and 'regal purple'
  • Colored sprinkles
  • Candy eyeballs

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a mini muffin tin with baking spray.
  2. Melt butter and chocolate chips in a microwave-safe bowl until smooth.
  3. Stir in cocoa powder and optional coffee grounds.
  4. Add brown sugar and granulated sugar; mix well.
  5. Incorporate eggs one at a time, followed by vanilla extract.
  6. In a separate bowl, whisk together flour, baking powder, and salt; combine with wet ingredients.
  7. Drop batter into muffin tin cavities using a cookie dough scoop.
  8. Bake for about 18 minutes or until a toothpick comes out clean.
  9. Form wells in each brownie bite right after baking and let cool completely before frosting.
